I'm a true oatmeal cookie monster... I only counted, and as of January 2018, I have shared 47 oatmeal cookie recipes with you. Eep! Have you tried any of these yet? (? They are some of the most well-known recipes on my blog because they taste really sweet and comfy, just like traditional"indulgent" oatmeal cookie recipes, but they contain no refined sugar or bread!

Healthy Banana Oatmeal Raisin Cookies
Yields: 15 biscuits
These oatmeal biscuits are soft, chewy, and full of banana flavor! The familiar comfy spices and plump blueberries make these even more irresistible. They'll keep for a minumum of one week if kept in an airtight container in the refrigerator--if they last long!
1 cup (100g) instant oats (fermented if required and quantified like this)
3/4 cup (90g) whole wheat or gluten-free* flour (quantified like that )
1 1/2 tsp baking powder
1/4 tsp salt
1 teaspoon vanilla extract
In a medium bowl, whisk together the yogurt, milk, baking powder, cinnamon, and salt. In another bowlwhisk together the butter or coconut oil, mashed banana, and vanilla. Add the flour mixture, stirring just until incorporated. Let the cookie dough rest for 10 minutes.
Preheat the oven to 325°F, plus a baking sheet with a silicone baking mat or parchment paper.
Using a spoon and spatula, dip the cookie dough to 15 rounded scoops onto the prepared sheet, and flatten to the desired thickness and width using 3-Ingredient Banana Oatmeal Breakfast Cookies - Clean & Delicious ... a spatula. Bake at 325°F for 10-12 minutes.
Notes: It is extremely important to quantify both the oats and flour correctly employing this technique or a kitchen scale. (? That's the one I have and enjoy!) Too much of either could dry out of the cookies and abandon them cakey instead of chewy.
